the dry mass is continuously
lifted to the upper area of
the tank and then thrown down
at a speed of more than 2m/sec
After the lique-faction of the
mass,a scraper running in op-
posite direction is activated,
what brings large quantities
of air to the mass.This is es-
sential to desintegrate the
finest cocoa cells and there-
fore to improve the flavour
and viscosity of the mass. |
